Born in Johannesburg, South Africa, Herbst developed through Monument High School and progressed into the Golden Lions system. He played age-grade rugby with the Lions and was included in the Junior Springboks training squad, continuing his development at Wits University.
He built his professional career with the Lions, competing in both Super Rugby and Currie Cup. He gained experience at a high level and established himself as a physical and consistent presence in the second row.
He joined the Seattle Seawolves in 2021 and has been a key starter since. He has earned over 70 starts with the club, surpassed 600 tackles, and played a major role in multiple MLR Finals, including earning All-MLR First XV honors in 2024.
Herbst comes from a strong rugby family background and credits the influence of generations before him. Outside of rugby, he enjoys playing golf.
